Calling All Cooks

I need some help.  Recently I made some OK-tasting enchiladas.  I think they have the possibility of being great, but they are lacking some flavor.  The meat filling called for garlic, onion, cummin, chilli powder, and a little bit of all-spice.  But it was still a little bland.  What would you add to the mix?

I would take out the allspice and add garlic powder, a little salt and some cayenne pepper.

Then again, as you know, I'm an experimental cook with only a slim chance of a favorable outcome, so proceed at your own risk. :)

Salt and pepper for sure! Sauteeing with onions will add flavor too. If you are a fan of the spice, add more chili powder and perhaps a pinch of cayenne. Fresh garlic never hurt anyone and it's delicious (shortcut, buy the kind that is pre-minced in the jar).

Don't be afraid to add more spice than is called for!

You need more peppers. :) Yep, do some hotter peppers. That's what they do here. :)

And, much of the traditional "enchilada heat' comes from the sauce you put over top, not the actual chicken mixture.

Definitely peppers. Or you could add some of your favorite salsa, which would be yummy and make it a little more delicious and spicy.
